The Details

Tasting Note Deep magenta in colour with a crimson hue. The wine shows concentrated fruit aromas of plums and blackcurrants balanced by the aroma of rich, dark chocolate. The palate is bold and robust. Savoury red fruits combine beautifully with the tannins to create a rich, warm compote, balanced by mocha and subtle oak on the finish. Drinking well now and will cellar for 7+ years.
Best Enjoyed With Try with a rich tomato based tortellini and aged parmesan or ratatouille and crusty toasted bread.
Treatment Both Cabernet Sauvignon and Merlot are harvested at various ripeness levels that captures a diversity of individual flavours. As the fermentation commences, the temperature is allowed to peak early at 30°C, then given more control at around 22°C. This ensures good extraction of colour and tannin. The grapes stay on skins for around seven days. The 2019 vintage was matured for 12 months in French oak barriques
