The Details

Tasting Note The Nautilus Pinot Noir is dark ruby in colour. The complex nose displays dark fruits, earthy notes and a touch of toasty spice. The palate is concentrated and elegant with a fine dense core of tannins and a long savoury finish.
Best Enjoyed With Beautiful accompanied by venison with star anise.
Treatment The grapes were fermented with wild yeast in open top fermenters after a 6-8 day ‘cold soak’. Careful cap management has resulted in extraction of only the soft ripe tannins. After pressing, the wine was racked directly to a mixture of new and older French oak Barriques, where it remained undisturbed until filtration and bottling in March 2018.

A blend of wines from two hillside vineyards in the Southern Valleys. Fermented with 20% whole bunches. Fine-grained pinot noir with plum, dark cherry, violet and dried herb flavours, together with an initial hint of struck-match that quickly dissipates.

A wine for the cellar, food and sharing
Complex and immediately engaging bouquet with aromas of black currant, raspberry and dark cherry. Baking spices of vanilla and old clove and plenty of toasty French oak. Equally complex on the palate, youthful too with firm young tannins and medium+ acidity. A core of red berry fruits remains persistent, varietal and pure. Long finish. A wine for the cellar, food and sharing from today and through 2029+.

...it really impresses
Boldness and refinement at work here; it really impresses with rich dark cherries, boldly spicy oak and a very attractively focused and punchy drive on the palate. Drink now, but better in a few years.
