The Details

Tasting Note Medium plum red in colour. This is an expressive Merlot, showing a fascinating combination of aromas, including ripe plum and cedar. An inviting perfume of cinnamon and clove, blended with blue fruit takes you on an exotic journey. The palate shows a depth of flavour that fills your mouth, bursting with plum, blackberry, dark berries and cedar, evolving to enticing savoury notes from the French oak. Lovely acidity combines well with the soft tannins and fruit to keep the wine enticing and structural.
Best Enjoyed With Enjoy with char-grilled lamb chops, veggie burgers with pomegranate ketchup or mushroom Wellington.
Treatment The art in Merlot winemaking is avoiding over-extraction of the tannins from the fruit and seeds. Our wines are made in static fermenters and we continually taste the developing wine and press the skins when there is structure and weight without tannic hardness. In the pursuit of soft tannins, we are judicious in our oak selection and moderate with its use.
