The Details

Tasting Note Pale gold with green tints. Vibrant stone fruits and quince with subtle hints of native blossom and lemon myrtle. Fresh and zesty with generous stone fruit flavours on the mid-palate. The fine, creamy texture is complemented by refreshing grapefruit acidity.
Best Enjoyed With Enjoy with a grilled nectarine and mozzarella salad with mint, rocket, balsamic and roasted cashew cream.
Treatment A fresh, modern style Chardonnay with a subtle hint of oak. A youthful expression of the unique terroir of Heggies Vineyard. Fermented and matured for 8 ½ months in French oak barriques; 30% of blend in 7% new oak and the balance one year and older.

The Details

Tasting Note The wine is green and vibrant in appearance, with zesty lemon and grapefruit aromas. The palate is intense and generous, with lively lime, citrus flavours. The wine finishes dry with refreshing, long acidity. As is the case with all great Eden Valley Rieslings, mesh will age gracefully into a mature wine.
Best Enjoyed With Perfect with natural oysters, or a rocket, pecan and pomegranate salad.
Treatment Clare Valley’s Jeffrey Grosset and Eden Valley’s Robert Hill-Smith work together each vintage before taking their chosen grapes – Jeffrey’s in the blue buckets and Robert’s in the yellow - and parting ways to crush and ferment the fruit at different locations. Debate follows, as the juice is assessed and the final, final, final blend is agreed upon. Each component, nearly identical at the start, undergoes a different conversion into wine, reflecting the personal differences of both men.

The Details

Tasting Note Initial aromas of spice, lemon curd and grapefruit opens to stone fruits with a hint of peach yogurt. The palate is defined with brilliant, fine acidity, the texture of sun-kissed quartz and crushed oyster shell. Flavours of pear fill the mid-palate, with a seam of citrus keeping focus on the long, salivating finish.
Best Enjoyed With Chicken piccata with rocket, lemon vinaigrette and parmesan flakes. Grilled asparagus pasta with a lemon sauce, black pepper and crispy sage leaves.
Treatment The fruit was meticulously hand-picked before whole bunch pressing, and then placed into a mix of new and older French oak puncheons and a 700 litre ceramic egg for 10 months. Winemaking included fortnightly stirring to assist develop texture and malolactic fermentation to naturally adjust acidity for balance and structure.

The Details

Tasting Note Pale yellow straw in colour. Fresh and fragrant with aromas of native daisy, citrus zest, lychees and hints of white nectarine. The palate is fresh with zippy, slatey acidity and textured complexity. Expressive flavours of lime zest, grapefruit pith and dried lavender. The natural sweetness is balanced by refreshing acidity and a talcy, slightly savoury edge on the finish with lingering fruit.
Best Enjoyed With It’s hard to see past the perfect food match of freshly shucked Tasmanian oysters, although fried haloumi or fish and chips with tartar sauce pair well too. For something a little different, try with a salad of ancient grains, salt bush and pomegranate.
Treatment Our Riesling is handpicked from part of a small 3-hectare block of mature vines. The vines enjoyed a long ripening season that helped the grapes reach optimum ripeness without compromising grape quality.

The Details

Tasting Note A vibrant sparkling Rosé showing aromas and flavours of strawberries, rose petals and fresh brioche, rich and creamy on the palate from the influence of both the grapes and tirage age. A vibrant yet delicate pink hue with a fine persistent bead. Turkish Delight and rose petal floral aromas combine with a textured mousse creaminess and strawberries on the palate to leave an elegant vibrancy and freshness
Best Enjoyed With Pair with smoked salmon blini and crème fraîche or poached quince tart.
Treatment Handpicking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine.

The Details

Tasting Note Pale straw in colour with green hues. Intense classic lemon fruit aromas with a hint of white flowers. Bottle aged characters of toast, clove oil and lemongrass have started to emerge and combine with the fresh citrus and white flowers of its youth. The palate has great length and depth with concentrated power, pristine fresh lime juice overlaid with toasted brioche, sage oil and lime marmalade. The wine finishes with soft, refreshing natural acidity.
Best Enjoyed With Enjoy with duck breast and five spice glaze or tofu pad Thai with fresh lime wedges.
Treatment The Contours Riesling is crafted from old vines grown on the coolest slope within this ruggedly beautiful single vineyard. Bottle ageing for five years before release transforms this Riesling into a complex wine. More richness and complexity will develop over future decades.
