The Details

Tasting Note Bright ruby in colour with moderate intensity, typical of the variety. Aromas of cut plum, blackcurrant and boysenberry with hints of blue florals such as violets, subtle spice and savoury notes that will develop. The medium bodied palate has crisp, crunchy, texture and bright acidity with vibrant red and blue fruits.
Best Enjoyed With Ideal for spring and summer with grilled salmon, terrines, mushroom risotto or slightly chilled as an aperitif.
Treatment The fruit was partially hand-picked, 3% of whole bunches and the destemmed balance were placed in an open top fermenter. Fermentation commenced naturally after three days and concluded five days later with gentle twice daily plunging. The wine was then drained into a tank with pressings added back for one day before being racked to one year and older French oak barriques. The wine underwent malolactic fermentation during its 5 months in barrel.
