Tasting Note Pale straw in colour with green hues. Aromas of freshly squeezed lemon and kaffir lime leaves. Fresh, zesty and fun, the long palate invites food and good times.
Best Enjoyed With Enjoy on its own, with fresh oysters, salads or your favourite antipasto.
Treatment Fresh and zesty. Made in a lighter style where the grapes are harvested as the first ripe flavours develop. Cooler fermentation contributes to its freshness and ultimately its lower alcohol style. Delivering flavours reminiscent of Meyer lemons, kaffir lime leaves and good times.

The Details

Tasting Note The 2022 Nautilus Pinot Noir is garnet in colour. The complex nose displays dark cherries, cassis, leather, cigar box and spices. The palate is concentrated and elegant with a fine dense core of tannins and a long savoury finish.
Best Enjoyed With Beautiful accompanied by Venison with Star Anise
Treatment To make this wine, fruit from Pinot Noir clones 114, 115, 5, 667 and 777 was hand harvested and de-stemmed without crushing to allow a portion of whole berries in the ferment. A small amount of whole bunch fruit was also included in some ferments (average 20% whole bunch).

The Details

Tasting Note Pale lemon in colour. An initial aroma of gooseberries opens up into fresh passionfruit, guava, feijoa and subtle floral layers, evoking summer fields. These aromatics lead into the palate of feijoa skin, passionfruit seed and juicy kiwifruit, finished with crisp acidity.
Best Enjoyed With Enjoy with garlic buttered Tasmanian scallops or a fennel and pomegranate salad.
Treatment This wine is crafted in two distinct batches—one utilising reductive winemaking techniques in stainless steel, and the other wild-fermented using the vineyard's natural yeasts, with oxidative aging in seasoned French oak barriques. The result is a harmonious blend of complexity and nuanced character.

The Parish of Forcett, with its warmer Tasmanian climate and sandy loam soils, yields vibrant Sauvignon Blanc. Ample sunshine enhances the intense fruit flavours of gooseberry and kiwifruit, with a balanced crisp acidity.

The Details

Tasting Note Fragrant fresh peaches, white florals, with hints of honeysuckle and ripe citrus. The palate is flavoursome and fleshy with a refreshing zingy finish.
Best Enjoyed With Pancetta-wrapped scallops with saffron and herb risotto.
Treatment Fruit was machine picked, using a destemming harvester prior crushing and pressing. The racked and clarified juice was then cool fermented in a stainless steel tank using an aromatic yeast. A short period of maturation on yeast lees followed prior to bottling.

The Details

Tasting Note Pale straw with green-gold tints. Fragrant citrus blossom and lime zest with hints of lemongrass and bath salts. Fine, elegant restraint and drive of natural acidity through the length of the palate. Flavours of citrus curd, fresh lemon and lime zest, perfectly in balance with the refreshing slatey texture, linger on the finish.
Best Enjoyed With Enjoy with Asian spiced shredded chicken salad or a green mango and crisp noodle salad
Treatment We ensure each vintage is of consistently high quality. Grapes are picked in the cool of the night, with gentle handling of the free-run juice to retain maximum fruit aromatics. The juice is fermented at cool temperatures using aromatic yeasts to maintain fruit purity and freshness in the final wine.

Tasting Note A vibrant sparkling Rosé showing aromas and flavours of strawberries, rose petals and fresh brioche, rich and creamy on the palate from the influence of both the grapes and tirage age. A vibrant yet delicate pink hue with a fine persistent bead. Turkish Delight and rose petal floral aromas combine with a textured mousse creaminess and strawberries on the palate to leave an elegant vibrancy and freshness
Best Enjoyed With Pair with smoked salmon blini and crème fraîche or poached quince tart.
Treatment Handpicking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine.
