The Details

Tasting Note Deep magenta in colour. Red plum aromas with lovely oak notes and perfumed florals such as violets with hints of dried herb. The palate is plush and full bodied with the Merlot showing through as blueberry and blackcurrant fruits. The sweet fruit is well supported by the Cabernet tannins and acidity, along with the dark chocolate edge from the oak. This vibrant, fresh wine will continue to delight over 7+ years.
Best Enjoyed With Try with a rich, tomato based tortellini and aged parmesan or ratatouille and herbed polenta.
Treatment Both Cabernet Sauvignon and Merlot are harvested at various ripeness levels that captures a diversity of individual flavours. As the fermentation commences, the temperature is allowed to peak early at 30°C, then given more control at around 22°C. This ensures good extraction of colour and tannin. The wine was then matured for 11 months in French oak barriques (9% of them new), balance in one year and older French oak barriques and hogsheads.

Clear sweetness
69/31% cabernet/merlot. Both the flavours and the fragrances rush up to greet you. Blackcurrant, eucalyptus, smoked tobacco, blueberry and black licorice, with cedar oak in support. There's a clear sweetness to the profile here, and softness, but then there are savoury/herbal notes as a counterpoint. It drinks easily and well.
